Vegetarian Style Goat Cheese Ravioli


A vegetarian style recipe of Goat Cheese stuffed in a ravioli style pillow is very easy and will be a great appetizer or light entré.

I again want to be clear about my vegetarian recipes. They are only listed as vegetarian recipes based on the fact that they are "meatless" recipes. They may not "qualify" as vegetarian to anyone who is a strict vegetarian.

About the Recipe

This goat cheese dish can be easily prepared in advance and you can freeze the pillows for up to 3 months. When you are ready to prepare your meal, just add the frozen pillows into the boiling water and cook 5 to 7 minutes. No extra time is needed to defrost this.

I have added an easy parsley pesto style sauce recipe. If this recipe is not to your liking, you can serve this with any favorite sauce you like. This is really worth trying, they are delicious and very easy to do.

Goat Cheese Pillows


  • Blend together the cheese, spinach, nutmeg, and salt and pepper in a small bowl. Set aside.

  • Separate the wonton wrappers into 2 even sections, so that you will have a top and bottom. Lay out one section of the wrappers and place 1 level Tablespoon of the cheese and spinach filling on each wrapper.

  • Dip your finger in plain water and moisten the edges of the wrapper and immediately place a plain wrapper on top. With a fork, seal the edges of the filled pillow.

  • Bring a large pot of water to boil, and drop the pillows into the water one at a time. Stir gently and cook about 5 to 7 minutes.

  • Use a slotted spoon to remove the cooked pillows from the water and place on a platter.

    Parsley Pesto Style Sauce

    • 1/2 Cup chopped parsley

    • 2 TBLS. Olive Oil

    • 2 TBLS. grated Parmegiano Reggiano cheese

    • 2 TBLS. Water

    • Salt and Pepper to Taste


    • Place the parsley in a blender or mini chopper and pulse about 3 or 4 times.

    • Start a steady pulse while adding the olive oil and then the water and cheese. If too thick you can add to your taste, either more oil, or water and pulse.

    • Pour the sauce over the Goat Cheese Pillows and serve with a tossed salad.

    Wine Pairing: Pair this with a Pinot Grigio. This is a delightful springtime meal.
