How To Keep Leftover Wine

Saving wine after the bottle has been opened can be tricky. Some may feel that every bottle of wine should be finished, but that is just not always realistic.

We do know that wine's exposure to oxygen (oxidation) will make the wine go flat, losing its aromas and flavors.

While it's relatively easy to wrap up the leftover dinner in plastic wrap or a plastic container, we just can't do the same to save wine.

Here are some methods to help slow down the oxidation of the wine so that it retains its freshness.

Refrigerate -- Wine Should be Kept Cool

Save either red wine or white wine in your refrigerator.

Keeping the wine cool and dark will slow down the oxidation and the wine should last three or four days.

Place the original cork back into the bottle to prevent additional exposure to oxygen and refrigerate.

Vacuum Pump

The original bottle of wine was sealed in the winery with as little oxygen getting into the bottle so that the wine's flavors and aromas are at its peak and destined to stay that way until the wine is uncorked.

It is almost impossible to replicate that once we've opened the bottle and exposed the wine to oxygen.

Using the vacuum pump can be one way to preserve wine by taking out some of the oxygen and helping to keep the wine's flavors and aromas tasting fresh for about a week.

The concept is to make the wine "air tight" to prevent oxidation. You simply place a pump over a reusable rubber stopper and pump out the air.

Gas Spray System

There is a gas spray system that uses harmless Nitrogen, Carbon Dioxide, and Argon gas. This is sprayed into the open bottle to move the oxygen away from the wine in the bottle and prevents the wine from spoiling.

This gas has been proven to be safe and environmentally friendly which makes it popular with the restaurants and bars. There are no toxins, or components that change the taste of the wine. This method can slow down the spoilage of wine by about 5-7 days.

If you know you will not finish the bottle of wine, pour into each glass only what you need! Immediately recork the bottle after each serving.
