    <title>Wine Selections for Father&#39;s Day</title>

You still have enough time to pick up a special wine for your favorite dad, grandfather, uncle, brother or anyone else for that matter. If you are grilling for Father&#39;s Day, here are some wine and food pairing recommendations that everyone will enjoy.&lt;/p&gt;


&lt;p&gt;Anything coated with barbecue sauce, with its smoky, spicy, and typically sweet flavors is a challenge for wine pairings.  Try a young, bold, fruity and spicy red wine, such as Zinfandel, American Syrah or Aussie Shiraz, or a French Ctes du Rhone.  They will stand up to the barbecue flavors.&lt;/p&gt;

&lt;p&gt;If hamburgers are the favorite food of the &#39;Day&#39; then just about any red wine will pair nicely (although I wouldn&#39;t suggest opening that special aged, complex wine you&#39;ve been saving). Beaujolais, slightly chilled (chilling brings out the fruitiness in this wine)   is a good choice, especially when the weather is a bit on the warmer side.&lt;/p&gt;

&lt;p&gt;Here are a few wine selections that just might be winners.&lt;/p&gt;  

&lt;b&gt;Yangarra Estate Shiraz 2005&lt;/b&gt;  This wine is from the coolest part of McLaren Vale.  It has concentrated flavors of blackberry and plums, with hints of spice and soft silky tannins.  

&lt;b&gt;Georges Duboeuf 2005 Fleurie Flower Label&lt;/b&gt;  This Beaujolais has a wonderful, spicy taste of black cherries that is very fruit forward.  It will pair well with pork, ham and chicken. 

&lt;b&gt;Veramonte Sauvignon Blanc Reserva 2007&lt;/b&gt;  This has a light straw color.  The fresh stone fruit, citrus and herbs mingle with floral accents. It is a zesty, medium body with citrus, melon and herb flavors.  This will pair nicely with the spicy dishes, or light fish 
with citrus.

&lt;b&gt;Kenwood Sauvignon Blanc 2006&lt;/b&gt;  This is a fresh and crisp wine with a lively body and lingering finish.  Serve chilled with acidic dishes such as salads and vegetables, and shellfish and seafood or chicken with a light sauce. 

Don&#39;t shy away from Rose.   A good rose combines the crispness of white wine (serve chilled) with the flavors of some of the red fruits typical of red wine.  This rose is excellent.

&lt;b&gt;Francis Coppola Sofia Rose 2007&lt;/b&gt;  Sofia Rose is a refreshing rose wine with aromas of rose petals and fresh strawberries and flavors of black cherry, raspberry and strawberry with lively acidity.  It is a perfect partner for savory summer fare such as spicy 
grilled chicken or a nicoise salad.</description>

    <description>Would you know if your wine is corked or  undrinkable? The contamination is from a substance called Trichloroanisole (TCA) commonly known as cork taint.  The aromas of mold and chlorine will be strong enough to know that the wine is undrinkable. 

If you are ordering a bottle of wine with dinner in a restaurant, the server should open the bottle at the table, put the cork next to your glass and then pour a small amount of wine in the glass for you to taste.  If the wine doesn&#39;t seem to taste quite right, you can smell the cork.  Of course, if the cork is synthetic, there is really no need to smell the cork.  It will probably mean that you just dont like the wine.   However, if the cork is real and you are unsure about the wine, ask the server to have the manager taste the wine.  He will certainly replace the bottle if it is tainted. 

It is also possible that the tainted wine will be undetected if the wine is served cold which happens often in a restaurant environment.  The tainted wine is unnoticed until the wine warms up in the glass.  Corked wine or cork taint is undiscovered until the wine bottle is opened. 

Unfortunately, cork taint happens, but it will not be happening as often with newer vintages since more wineries are using synthetic corks and screw tops.

The New York State wine industry is one of the oldest in America, and then again, it is also one of the newest.  Over two-thirds of the wineries have been created in the last 15 years.
