Chicken - Easy Recipe

Versatile Chicken And Wine Pairing Recommendations

The most requested recipe is for chicken and one of the reasons is its versatility. There are thousands of recipes and most of them can be changed to satisfy you and your family's tastes.

This simple chicken recipe can be changed to include your favorite ingredients. Leave out the sundried tomatoes and add artichoke hearts. Or include sliced mushrooms. You can increase the amount of liquid so that you have enough to add some noodles on the side.

Cooking Chicken With Wine

When using wine in your recipes it is best to use a wine that you would like to drink with your meal. Although I would not suggest using that aged bottle you've been saving for a special occasion.

One tip when cooking with wine is to use an "un-oaked" style of wine. The oakiness in the wine when cooked can have a taste that is unpleasant.

So if Chardonnay is your favorite wine, be sure to choose one that was fermented in stainless steel rather than oak.

Simply Sautéed Chicken Breasts

Ingredients
  • 2 Boneless/skinless chicken breasts
  • 1-2 Tbls. olive oil
  • 1 small sliced onion
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine
  • 4 sundried tomato halves in oil sliced (optional - or substitue either mushrooms, artichoke hearts, olives. . .)
  • Chopped fresh parsley
  • Salt and Pepper to taste
Directions
#1. Pre-heat a large nonstick saucepan with the olive oil. When pan is hot, add the chicken breasts and sauté until lightly browned on each side (about 5-7 minutes each side). Remove chicken from pan and set aside.

#2. Add the onions and sauté until soft (approx. 4-7 minutes). Add the chicken broth and white wine to onions and stir. Add the chicken and the sundried tomatoes and let simmer about 10 minutes or until chicken is cooked through.

#3. Add fresh parsley on top and serve over rice. Cherry walnut rice is a great combination.

Wine Pairing

Sauvignon Blanc from New Zealand
Fume Blanc from California.
If you use mushrooms in your dish choose a Pinot Noir. Or, you can serve the same wine you used in your recipe.
